WHere is a simplified interpretation of a beverage featured on our latest menu. It's a large-volume prepared mix which is packed full of tastes of the holiday season, rendering it excellent for hosting a holiday party. Reserve the remaining cordial to use in morning drinks, sweets, or to make additional servings of the drink.

Serves 10 people
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
To prepare the Cordial: Put every ingredients inside a pan, bring to a simmer, mixing until the sugar dissolves. After that, take off the stove allowing it to reach room temperature completely. Decant to a sealable bottle, close it and refrigerate it in the fridge, it can be stored for about a month.
To make Batch Mix: Pour all the liquids in a big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, to ensure it's perfectly clear.
To serve: Measure 85ml from the premix to a cocktail shaker filled with ice, gently stirring gently for one minute until cold. Filter into an frosted cocktail glass or a similar vessel, top with some cranberries and complete it with a brief mist of mandarin oil over the top.
